View Full Version : Weight Watchers Pizza Soup recipe

Jennifer emailed me Sharon's pizza soup recipe. I have made a few small changes, and I came up with about 2 points per cup of this soup. That is without the cheese!!! I figure if you want cheese, you can sprinkle that on and figure it separately. This recipe makes about 6 cups of soup. Here is the recipe as I have calculated it in Weight Watchers Recipe Builder:

Pepperoni Pizza Soup

1 Tbsp. Olive oil

1 cup sliced mushrooms

1 cup chopped green bell pepper

½ cup chopped onion

1 can (15 oz.) pizza sauce

1 can (14 oz.) fat free, low sodium chicken broth

1 cup water

3 oz. sliced Hormel turkey pepperoni

1 tsp dried oregano

1 cup shredded mozzarella cheese**

Heat onion in large saucepan over medium heat.* Add mushrooms, and bell pepper. Cook, stirring frequently, 7 minutes or until vegetables are tender. Stir in pizza sauce, broth, water, pepperoni and oregano. Bring to a boil. Reduce heat and simmer 5 minutes. Serve with cheese

Makes 6-1 cup servings @ 2 pts each. (cheese is extra!)

I edited my original post because I made this soup last night, and it ended up making about 6 cups of soup. It was good the first night, but it was even better re-heated the 2nd day!!!!!
