Need a new way to make a salad

Anyone have any good ideas for a fresh salad. I would like to use Spinach leaves. Nathan want's to start eating more healthy, he told me he wanted to start eating PB&J everynight for dinner! :confused: I told him how about a salad instead! LOL!! Any and all ideas welcomed!
