I made this cake for df this week and it was a big hit..and all gone now, lol
1 yellow cake mix
1 jar smuckers sugar free strawberry jelly
1 pchk. cream cheese
1cup splenda
1 container sugar free coolwhip
1 tsp vanilla
1 tsp corn starch.
prepare cake mix as directions say for 2 8 inch round cakes. cool and cut each cake in half..making 4 layers. place 1 layer down and cover with a layer of jelly, place second layer down and cover with a layer of frosting ( directions below) place on 3rd layer of cake and cover with jelly. Add top layer of cake and cover with last of jelly and top with frosting, as well as frosting sides of cake.
frosting: 1 pkg cream cheese, 1 tub sugar free cool whip, 1 cup splenda, 1 tsp. vanilla, 1 tsp corn starch..blend all together until smooth.
this makes a really moist and yummy cake that is not too sweet, but enough to cure a sweet tooth
