View Full Version : Roast Pumpkin & Chickpea Salad

This is what i'm having for dinner 2night!

3-4 cups cubed butternut pumpkin
1 teaspoon minced garlic
1 x 400gram tin chickpeas
200grams fresh green beans
1 handful chopped coriander
Pinenuts

Dressing
60ml olive oil
60ml lemon juice
1 teaspoon minced ginger

Roast pumpkin cubes and garlic in a little oil (approximately 20 minutes)
Blanch beans for 2-3 minutes or zap in the microwave just a little
Combine pumpkin, chickpeas, beans and coriander
Shake dressing ingredients together and gently toss through salad
Sprinkle pinenuts

Enjoy!
ps if you don't like coriander (i love it) u can use parsley.
