Break ramen noodles into a medium bowl.
Sprinkle with ONE seasoning packet.
Cover with boiling water, stir, set aside.
In large skillet, brown ground beef. Drain.
Add onion and sprinle with remaining seasoning packet.
Cook for an additional minute.
Add the noodles, undrained, the vegetables, and the soy sauce.
Cover and bring to a simmer.
Cook until the vegetables are tender, about 5 minutes.
