Thread: Gumbo

    Gumbo

    2 lbs fresh okra, you can use frozen if you can't get the fresh
    2 tblsp. salt
    1 can whole tomatoes or 2 medium fresh tomatoes diced
    2 white onions, diced
    2 large bell pepper, diced
    2 tblsp. cayenne pepper
    1 tblsp. worchestire sauce
    1 bunch green onion, dcied
    1 whole chicken
    2 pkg of your favorite link sausage, cut into 1/4" pieces
    1/2 bottle gumbo file`-sassafras
    1 cup oil
    1 cup flour
    6-8 jalapeno peppers, cut into small pieces

    Make rue by adding oil and flour in a 2 1/2 quart pot. KEEP RUE OVER LOW HEAT, stir constantly making sure to not let it burn.
    When rue is a dark brown color add onion, worchestire sauce, bell , jalapeno peppers and salt; saute.
    When veggies are tender add chicken and enough water to cover it.
    Turn your heat up high and bring to a boil, if it starts looking like dirty dishwater it's right!
    Stir occasinally so it doesn't stick.
    Fry okra in oil until it's not sticky anymore, then drain the grease well and add to pot with chicken.
    Add tomatoes.
    When chicken is cooked completely take out and remove it from it's bones and remove skin.
    Remove excess fat from the top of your rue then add chicken and sausage to pot.
    While its boiling add the gumbo fillet.
    Turn down fire to low, cover and cook for 35 mins, stirring occasionally.
    Serve over white rice.
