  1. Spinach Salad with Apple & Red Onion

    1 pound spinach leaves
    1 small golden delicious apple, quartered, cored ad sliced
    1/4 small red onion, thinly sliced
    1/4 cup olive oil
    1 1/2 tablespoons apple cider vinegar
    1 teaspoon grain mustard
    1 tablespoon honey
    Coarse salt & pepper to taste

    Place spinach, apple and onion in salad bowl. Place oil, vinegar, mustard and honey in a small plastic container and fit lid on container. Shake dressing to combine, 1 minute. Pour dressing over salad, toss, and season with salt & pepper, to taste.


    ** I personally have never tried this recipe but I printed it off and want to try it. So try it at your own risk. LOL

    Yum, that sounds so good.
    There is a salad at Bucca d' Beppo...our favorite italian restaurant in Pineville - apple gorgonzola - that sounds a lot like that...it's so good! Now I want one!

    Yummmmmm! Spinach salad is the only salad I really enjoy, I eat others, but don't like them!

  6. I make something like this, but I add sliced strawberries and sunflower seeds to it.
