  1. Pecan Pie Mini Muffins

    These are delish!!!!!!

    30 min | 5 min prep

    2 1/2 dozen

    1 cup packed brown sugar (I use light)
    1/2 cup plain flour
    1 cup chopped pecans
    2/3 cup melted butter
    2 eggs, beaten
    In bowl, combine the sugar, flour, and pecans; set aside.
    In separate bowl, combine the butter and eggs. Stir in the flour mixture.
    Fill greased and floured mini muffin tins about 2/3 full.
    Bake at 350°F for 20 to 25 minutes, or until they test done with a toothpick.
    Remove from tins immediately, and let cool on wire rack.

    These also freeze well.

    OMG DH would love these! He devours pecan pie!

    Dumb question though - will regular flour work?

    should have said plain flour...oops....yes plain flour. The eggs help them rise. (I just changed it in the recipe....there are other recipes for same muffins calling for self rising flour...just that srflour has salt and you don't need extra salt because there is salt in the butter.)

    I think if you don't use the self rising flour, you must add either baking soda or baking powder - I don't know which- to help muffins rise. I think I have the substitution in a cook book. I'll go check and see if I can find it. Maybe someone else knows for sure.

    These don't really need to rise a lot...because they need to be a little bit on the gooey side like pecan pie.

    oh...and you can use Baker's Joy cooking spray. If you use any other kind of cooking spray, then you need to flour your muffin tins.

    those sound yummy Jan! My substitution ended up being for cake flour anyway. My mistake!
