    Cinnamon almonds

    This is originally from allrecipes.com. After reading several of the comments, I tweaked it and this is the recipe we used yesterday. We will definitely be making these again.

    Cinnamon almonds

    1 egg white
    1 t vanilla
    4 C whole almonds
    1/2 C brown sugar
    1/2 C white sugar
    1/2 t salt
    1-2 t ground cinnamon

    Preheat over to 250*(120 degrees C). Lightly grease a 10 x 15 jelly roll pan. Lightly beat egg white & vanilla until frothy but not stiff. Add the nuts and stir until well coated. Mix sugars & salt adding gradually to coat well. I added the cinnamon toward the end. Turn and mix well so it is all well coated. Spread in a single layer on the prepared pan.
    Bake 1 hour, stirring occasionally. Allow to cool and then store in airtight container.

    sounds good-sometimes I do this with splenda and butter/margine and they taste pretty good as a low carb sweet. I have never added vanilla tho- I am going to try that. TFS

    One of the reviewers of this recipe had done that, but since I only had the little packets of Splenda in the house I had to do it with regular sugar.

    I made these AND the caramel corn today. Both are to die for! Will be making more before this season is done, that's for sure! Thanks so much for the recipe!
