    Easy Chicken Tortilla Soup -- yum!

    This is a great recipe -- you can have it on the table in about 40 minutes after you decide to make it! My family loves it. I've added my variations and explanations in parenthesis.

    1 T olive oil
    1 pound boneless chicken breast cut up into 1/2 inch pieces
    8 cups chicken broth
    2 teaspoons ground cumin
    1/2 cup uncooked rice (I use closer to 1 cup of uncooked rice)
    1 can (11 oz) Mexicorn (corn with red and green peppers)
    1 cup chunky salsa
    1 Tablespoon chopped fresh cilantro (I've used fresh and dried)
    Fresh juice from 3 limes (I usually use 2)
    Tortilla chips
    Shredded Monterey jack cheese

    Heat olive oil in a soup pot, add chicken, cook until browned, stirring often. Add broth, cumin and rice. Heat to boil, cover and cook over low heat for 20 minutes. Stir in corn, salsa, cliantro and lime juice. Heat through. Serve. Top with cheese and chips to taste.

    I have nevere tried chicken tortilla soup, but I will try it now! it sounds yummy
