Thread: Spanikopita(greek spinach pie)

    Spanikopita(greek spinach pie)

    4 pkgs. frozen spinach
    1 lb. ricotta cheese
    1 lb. feta cheese
    1/2 cup parmesan cheese
    16 sheets phyllo dough
    3/4 cups butter, melted
    4 eggs, beaten
    1 medium onion, chopped
    3 cloves garlic, minced
    salt & pepper

    Allow spinach to defrost completely. Squeeze spinach dry& combine with cheeses, onion, garlic, eggs, and salt & pepper. Arrange 8 phyllo sheets , each brushed with butter in a greased10x15 inch pan & cover with spinach filling. cover top with 8 more buttered phyllo, seal edges as best you can. brush top with melted butter. bake at 350 for about 45 minutes.

    not a diet food but I make and eat it once with a nice side salad, then I freeze the rest in individual servings, so when I have it, I just eat one portion then I don't have it again for weeks. it really does freeze well & makes an easy lunch to take to work.

    Sounds so yummy! Do you mind if I use it for a Recipe Swap that I'm in over at ISC (Inspire, Swap, Chat)? I'm in one with a LOTR (Lord of The Rings) theme and I chose to do Aragon--maybe I'll call it Aragon's Airy Spinach Pie...

    Thank you so much for sharing this recipe! I love spanikopita. We have an awesome Greek restaurant in town, and they make this really well!

    This sounds so yummy, Cindi. I've never tried to make any yummy greek food. We have a fave restaurant that does it well. This sounds simple enough to make.
