Have you ever baked a cake with diet pop?

(or diet "soda" depending on where you're from! LOL)

I think someone had told me you could do this a long time ago, but I forgot about it until someone just mentioned to me again the other day.

You can use a dark diet soda in chocolate cake
lemon-lime diet soda in a vanilla cake
ginger ale or root beer in a spice cake
etc, etc.

I just dumped my cake mix in a bowl, then added 1 can of soda. Mixed it up and popped it in the oven!

I never have, but I do make my scones with diet lemonade

I baked it yesterday and used it in a dessert today, and it was good!!

I made a pumpkin spice trifle that had the cake in it.


Last weekend my MIL baked one that was vanilla and she used lemon-lime soda. She then doctored it up with some fat free sugar free pistachio pudding and whipped cream. It was great!

Pumpkin trifle sounds awesome!! I had heard of using diet sodas but never done it myself. Glad it was yummy!

I use 7UP in one of my lemon pound cake recipes and it is delish!
