funeral potatoes
i was talking to patty earlier and was telling her about funeral potatoes. i'm thinking these are a utah thing. they are at almost every after funeral meal. maybe others know them as cheesy potatoes. either way, they are awesome!
1 bag frozen hash browns (can be shredded or cubed. i like cubed.)
1/4 cup butter
1 can cream of chicken soup
1 cup sour cream
1-2 cups shredded cheese (depending on how cheesy you want them!)
1/4 cup chopped onion
salt & pepper
melt butter and cook onions for a few minutes. add soup, sour cream and cheese. mix till warm. pour over hash browns in a baking dish. sprinkle cheese on top (some sprinkle crushed corn flakes or bread crumbs). bake at 350 for about 30-40 minutes until bubbly.

I've had these before, but have never heard anybody around here call them funeral potatoes. Around here we call that a hash brown casserole. And I agree, It is delicious!!

I thought they were a Vermont thing! And yep, we call them funeral taters!

I've made them several times at Easter to go with the Ham! We call them Cheesy Potatoes--but whatever the occasion, they always go over well--very yummy!

LOL! I had to come and see what a funeral tater was....Too funny. Never tried it but it sounds yummy!

we have them sometimes, I thought they were a Mormon thing, but I rekon Utah is close enough.
