This is a very easy and low-point soup.

Cheese Soup
3 cans fat-free chicken broth
1 can Ro-Tel
1 head cauliflour
10 oz light Velveeta

Cook the cauliflour in the chicken broth until tender. Puree using a hand-held blender or in a regular blender or food processor until smooth. Add Ro-Tel and cheese. Stir until melted.
