View Full Version : Sherri's famous meatloaf (recipe makes 2 meatloaves)

This is my wonderful meatloaf that I am making tonight. Its so good!!


2 eggs
2/3 cup milk
1 teaspoon salt
1/4 teaspoon pepper
3 slices bread, cut up

Stir and mix together. Then add:

2/3 cup shredded carrots
2/3 cup finely chopped onions
2/3 cup shredded cheese
2 lbs ground beef

Add all ingredients together. Cook at 350 for 1 hour, 15 minutes. Then make glaze with 1/4 cup brown sugar, 1/4 cup ketchup and 1 tablespoons dry mustard. Mix and spread on top. Cook meatloaves 15 additional minutes.

This makes 2 meatloaves!! One for now and one for later ;).

I'll have to try this one. I always make the meatloaf recipe that's on the Lipton's Beefy Onion Soup Box. It's good and moist.

ooh! I'll have to try this. DH always says that my meatloaf tastes good, but different every time.

i don't have any carrots. could i use anything instead?

I'm sure you can. I really don't think carrots add much taste anyway.

Sherri are you suppose to cover this or bake it uncovered?? Do you add any water to the pan? When I make my mom's meatloaf it's very different from this and we add water to the pan.

My mom uses chopped celery instead of carrots. Some use bell pepper, but I don't like it. I prefer carrots or celery. I think the carrots add a nice hint of coloring!!
